Hershey's chocolate syrup recommends that you "refrigerate after opening", but unlike many other sauces with this recommendation.Ketchup, mayonnaise, BBQ sauce, etc.The bottles of chocolate syrup are not sealed. There is no way to remove the cap before use.

I understand the argument that the bottle is sealed at the factory, but the chocolate is never sealed, so this doesn't seem to hold.

Is there a reason why chocolate syrup needs to be refrigerated after opening?

As the transport and shelf storage of the item is likely to be controlled, there is little chance that the ingredients will separate prior to use.Storage fluctuations and use can throw the emulsifiers in a home kitchen.

Although I am inclined to dismiss the need for refrigerating it, it is likely that a less stable batches will make their way into a hot and cold kitchen and the contents will separate.

For big brands, a major focus is to ensure consistency among products in spite of quality or diverse ingredients; hence watery domestic beer (U.S.), Lay's potato chips, and refrigerated chocolate syrup that is harder to use than when stored at room temp.

There is chocolate syrup running at a water activity. It's resistant to mostbacteria and yeast, but may pick up a layer of mold on the surface.I keep the stuff in the fridge because my mom did, but that doesn't seem to be critical to long shelf life. The new chocolate syrup may not have the same low water activity as the traditional stuff.
