Ice cream cakes are a great birthday or special occasion treat.If you make one at home, you can change the flavors to make it your own.There are layers of sponge cake in this recipe.
Step 1: Grease and flour the pan before placing it in the oven.
Grease a 9 in (23 cm) round cake pan with butter or margarine to make sure it doesn't stick to the pan.To coat the bottom and sides of the pan, sprinkle a little flour in the center and tip it from side to side.Remove the excess flour.
Step 2: One cup (60 g) of flour and one cup (55 g), should be combined.
Either use a sifter to sift the ingredients or place them in a small bowl and stir them together with a whisk.If you want to make a chocolate ice cream cake, add 1/2 cup of cocoa powder to the mixture.Add cinnamon, nutmeg, and ground cloves to the cake.
Step 3: The egg yolk and sugar mixture can be made.
An electric mixer can be used to beat together 4 egg yolks, 2 spoon of vanilla extract, and 1 cup of sugar.It takes about 5 minutes for the mixture to become thick and pale.
Step 4: The egg white mixture needs to be made.
Place the egg whites and salt in a bowl.The whites should be beat until they form soft peaks.Add the remaining 14 cup (55 g) of sugar to the mixture.When the egg whites become glossy, keep beating.
Step 5: The ingredients should be combined.
The egg white mixture should be folded into the egg yolk mixture.With a spatula, fold in the flour mixture.Continue folding the ingredients until they are combined.
Step 6: The cake pan has batter in it.
Place it in the pan with a spatula.
Step 7: The cake pan should be placed in the oven for 35 minutes.
Make sure the pan cooks evenly by rotating it 180 degrees.When the toothpick comes out clean, the cake is done.Remove the cake from the oven and place it on a wire rack or plate.Run a rubber spatula around the edge of the cake to make sure it's not sticking to the pan.If the cake breaks, place the pieces on a plate and allow them to cool.You can still eat the cake.
Step 8: The cake needs to be sliced.
Use a large knife to slice the cake so that you have 2 thin discs of cake.Put them in the freezer for several hours.When the halves are frozen solid, you can assemble the cake.
Step 9: Allow the ice cream to be soft.
Let the ice cream sit on the counter for a while.Scoop the ice cream into a large bowl when they are soft enough to handle.Stir the ice cream with the spoon until it has the consistency of spreadable icing.
Step 10: The cake should be ready.
Remove the cake halves from the freezer while the ice cream is still soft.Wrap the other half around the cake plate.For now, set the other half aside.
Step 11: There are alternating cake and ice cream layers.
Spread ice cream over the first half of the cake using a spoon and spatula.Don't let it spill over the edges of the cake.A thick layer of ice cream is what you should have.The second layer of cake should be placed on the ice cream.The ice cream should be spread on top of the cake.You can leave off the second ice cream layer for a smaller cake.If you'd prefer to have the cake layer on top, you can still have 2 ice cream layers; after spreading the first one, make a layer of crushed cookies or chocolate chips, then add the second one.
Step 12: The cake should be frozen.
It will take about two to four hours for the cake to be completely frozen.
Step 13: The topping needs to be whipped.
Soft peaks begin to form when you beat 2 cups of heavy whipping cream with an electric mixer.Continue beating until the topping becomes stiff, and add 12 cup of confectioners sugar.If the topping is too high, it will turn into butter.If this happens, you should add 2–4 ounces of heavy whipping to the bowl and use it until you reach the desired texture.Food coloring can be added to the whipped cream to make it look like ice cream.If you're making a strawberry ice cream cake, add a few drops of red food coloring to make a pink topping.
Step 14: You have to top the cake.
The cake needs to be removed from the freezer.Using an offset spatula, spread the whipped topping on the cake.To hide the layers, spread more topping on the sides of the cake.If you want, you can decorate the cake with fruit or chocolate chips.If you want a fancy cake, place the whipped topping in an icing bag and pipe it onto the cake in a pretty pattern.
Step 15: The cake needs to be frozen.
The topping should be placed back in the freezer.When the topping is stiff, the cake is ready to serve.
