It's a good idea to have canned peaches on hand.They are good in a homemade dessert.Here are some steps to canning your own fruit.
Step 1: Pick your fruit.
The flesh of freestone peaches can be easily removed from the pit.These are the easiest fruit to grow.Most grocery stores and markets have freestone peaches.It takes about 5 large peaches to fill a jar.
Step 2: The peaches should be in a bowl.
Put the peaches in the cold water.
Step 3: The peaches are in the boiling hot water.
It's easier to peel the peaches when they're blanched.Bring the pot to a boil by filling it with water.Make sure that the peaches are submerged in the water.The peaches should be left in the water for 40 seconds.Leave the peaches in the water for a minute if they are slightly under-ripened.
Step 4: The peaches were quartered.
Place the blanched peaches on a cutting board and use a knife to cut them in quarters.The pits need to be thrown away.
Step 5: Place a cup of lemon juice on the peaches.
The lemons will keep the peaches from turning yellow.
Step 6: Put water in a pot.
Add sugar slowly while the water is heating.The water and sugar should be boiled for light syrup.This will give 7 cups of syrup.For medium syrup, boil 6 cups of water and 3 cups.This will produce 6 cups of syrup.The water and sugar should be boiled for heavy syrup.This will give 7 cups of syrup.
Step 7: Slowly stir the mixture to get rid of the sugar.
The water should be brought to a boil.It's possible to replace sugar with a low-cal option.Do not use it.
Step 8: After the sugar has dissolved, keep the mixture hot.
Do not keep boiling it.You will have to start over if you continue to boil it.
Step 9: The jars should be put in the dishwasher.
If you want to do a full cycle, run the dishwasher.The jars should be sterilized to make sure that nobacteria will grow in canned peaches.
Step 10: Bring the water to a boil.
The jar lid should be placed in the boiling water.The jars should be filled in the boiling water.
Step 11: When you are ready to get the lids, use a magnetic lid lifter.
You can buy magnetic lid lifters on Amazon or Target.Place rubbed bands at the end of a pair of tongs to make your own jar grabber.
Step 12: The peaches should be put in the simmering syrup mixture.
Put the peaches in the jars directly from the mixture.
Step 13: Leave 12 to 1 full inch of space at the top of the jar.
The peaches need to be tightly packed into the jar.
Step 14: There is a rubber spatula between the peaches and the jar.
The jar has air bubbles in it.Air bubbles can cause mold to grow inside a jar.While running the spatula between the jars, tilt the jar slightly.
Step 15: The jar has a syrup mixture in it.
Take 12 of the space from the top.The peaches should be completely covered.
Step 16: All spills and sugar from the jar should be wiped off.
Seal the jar tightly by placing the lids on it.
Step 17: The jars should be placed in a canner with water above them.
You can make your own canner if you don't have one.There is a pot or saucepan that can hold jars.There is room for an inch of water above the jars.Before you put the jars in, place a towel at the bottom of the pot.The jars won't be able to touch the metal of the pot.
Step 18: Determine the canning time.
The altitude of your location and the type of canner you have affect canning time.You should check your canner's instructions.The guidelines should help if you are using a boiling water canner.Cook for 10 minutes for,000 feet above sea level.For over 3000 feet, cook for 15 minutes.For 6000 feet, cook for 20 minutes.If you are above 6,000 feet, cook for 25 minutes.You will need about 8 minutes to use a dial gauge pressure canner.The canner's instruction manual is a good place to clarify.
