Legally, your skin is yours so if you want to hack off a leg, you could tan it and get yourself a nice piece of legal leather! Not very sustainable though! And no one will tan it for you, you'll have to learn how to tan it on your own. Also it's not illegal to have yourself stuffed like in taxidermy.
