The Cantonese word for "cooked noodles" is chow fun and is a traditional stir-fry dish.Most of the time, the dish is prepared with strips of beef, but there are also versions made with ingredients like chicken and pork.
Step 1: Cut the beef.
Cut the beef into thin strips with a sharp knife.The strips should be about 5 cm wide.Cut each strip into small slices.
Step 2: Put the beef in a container.
In a large bowl, whisk together the cornstarch, soy sauce, and sesame oil.Stir well until all the meat is coated.For 10 to 20 minutes, set the meat aside.
Step 3: The noodles need to be separated.
You can separate the noodles by using your hands.If necessary, cut the noodles in half.As you separate them, the noodles may break into smaller pieces.If possible, use actual chow fun noodles.If not, use a wide rice noodle.
Step 4: The green onions are split.
The green onions should be cut off.Put the white parts in a bowl with the flat side of your knife.The ginger and garlic should be added to the same bowl.The green onion should be placed in a separate bowl.Set aside.
Step 5: The seasoning liquid must be prepared.
In a small bowl, add the white pepper, sugar, remaining soy sauce, rice wine, oyster sauce and water.Next to the other ingredients, place this seasoning liquid.
Step 6: Put the skillet in the microwave.
Place a large skillet or wok on the stove and heat it up.When it's hot, add 1 Tbsp of cooking oil.The skillet is hot if you add a bead of water to it and watch it evaporate.
Step 7: The aromatics can be heated.
The green onion should be placed in the hot oil with the ginger, garlic, and crushed sections.When the aroma gets drawn out, cook, stirring constantly, for 15 seconds.Push the aromatics to the other side of the pan.
Step 8: Put the meat in a cooker.
The beef should be in the pan.Don't stir it for 1 minute.
Step 9: Add some bean sauce.
The bean sauce should be in the skillet.Continue to cook the beef for 30 seconds.Black bean garlic sauce can be used.If you cannot find black beans at the store, you can crush them with a fork.The beef should be cooked through, but be careful not to overcook it.Remove the beef, bean sauce, and aromatics after cooking.Set it aside.After removing the pan's contents, rinse and dry it.
Step 10: The noodles and bean sprout should be eaten.
Before adding more oil, the pan should be reheated on high heat.For 2 minutes, sear the noodles in a flat layer without stirring.The beans should be cooked for another 1 minute or so.Some noodles may stick to the pan during this time.
Step 11: Everything should be returned to the pan.
The beef and aromatics should be in the pan.Add the green onions to the mix.Stir-fry for another minute with the seasoning liquid.The sauce should be heated through when the beef is done.
Step 12: Give it a go.
Take the chow fun out of the heat and put it on a platter.Immediately serve.
Step 13: The noodles should be separate.
The rice noodles should be separated by hand.If necessary, cut them in half and set them aside.If you can find chow fun noodles, use them.If not, use a wide rice noodle.
Step 14: Place the chicken in a bowl.
Use a sharp knife to slice the chicken breast.The sesame oil, black vinegar, rice wine, and Chinese black bean paste/sauce are used to make the soy sauce.If you want to chill the chicken, toss it in the mixture and let it sit for 15 minutes.If you want to combine everything in a bag, you can use a large bowl orMarinate the chicken in that.Try a hot chili bean sauce with garlic.
Step 15: The broccoli should be prepared.
Put the broccoli in running water and pat it dry.Cut the vegetable into pieces.Hard stem pieces should be cut in half.
Step 16: Place the skillet in the microwave.
Place a large skillet or wok on the stove and heat it, dry, over medium-high.It should warm up for 1 to 2 minutes.Once dropped into the skillet, a small amount of water should start to sizzle and evaporate.
Step 17: The chicken needs to be stir-fryed.
Add the chicken to the skillet and cook, stirring continuously, until completely cooked through.Set the chicken aside after it's been cooked.
Step 18: Cook the broccoli and peppers.
Stirring constantly, add both ingredients to the hot pan and cook for 3 minutes.The Chinese broccoli and pepper should be very tender and bright green.When the vegetables are cooked, transfer them to the same dish as the chicken.
Step 19: The garlic and noodles will be added.
When it starts to shimmer, put the oil into the pan.When it starts to brown and smell more fragrant, add the garlic and cook for 1 minute.Cook the noodles for 2 to 3 minutes.Lift the noodles with tongs.When ready, the noodles should be soft.They should stick to the pan.
Step 20: Put the soy sauce in a container.
You can add the rest of the soy sauce to the pan with the noodles.The noodles should be soft and brown.
Step 21: Return everything to the pan.
Return the chicken and vegetables to the pan and toss them with your tongs.Keep the heat on.
Step 22: Give it a try.
Remove the heat and serve individual dishes.If you want, you can add a dash of chili oil.
Step 23: Make sure the oil is hot.
The vegetable oil should be put into a large skillet or wok.Turn the heat on to medium-high when you put the pan on the stove.The oil should be warm for 1 to 2 minutes.Drop a bead of water into the pan to test the oil.The water should catch fire if the oil is hot.
Step 24: The meat and ginger will be stir-fryed.
The slices of pork and ham should be added to the oil.The ginger should be placed in the oil as well.Cook for several minutes, stirring frequently, until the meat and ginger turn a light brown on each side.The ginger's aroma should become stronger.
Step 25: Add the other vegetables to the mix.
The vegetables should be put into the hot oil.Cook the vegetables, along with the meat and ginger, until they are tender-crisp.
Step 26: Add the bean sprout.
The bean sprout should be placed in the ban and stir gently.At this point, remove everything from the pan.
Step 27: The noodles will be stirred-fryed.
Add the vegetable oil to the pan.The noodles should be in the pan for a full minute.If possible, use actual chow fun noodles.If not, use a short rice noodle.The noodles can be cooked for a little while longer if you prefer crunchier edges.Don't go over an additional 1 to 2 minutes.
Step 28: Take everything to the pan.
The meat and vegetables should be in the pan.Cook the sauce just long enough to warm it.If you want, soy sauce can be used instead of oyster sauce.
Step 29: Take care.
Take the chow fun out of the heat with chopped green onions.Enjoy and serve.
