One of the highlights of family get-togethers and holiday breakfasts is fresh baked homemade cinnamon rolls.

Why is something so delicious only for special occasions?It can take as long as six hours to make them from scratch.Someone has to get up six hours before breakfast to make them.

Not convenient.There needs to be a way to enjoy cinnamon rolls for breakfast without having to wake up in the middle of the night.

Different recipes use different makeup techniques, ranging from the straight dough method to the sponge method, with many slight variations in between.They all take time, that's what they have in common.You can't get around that.

Roll out the dough, add the filling, and cut it into individual rolls as per the recipe you're using.

The yeast goes into sleep when you freeze the rolls.When you take it out of the freezer and bring it to room temperature, it will wake up and continue its business of consuming sugar and producing CO2 gas, which is what makes the dough rise.

Not all of the yeast will live in the freezer.A week or two is fine, but longer than that and some of the yeast will have died, which will look to you like the rolls will take longer to rise or won't rise as much as they should.

If you know you're going to make the rolls more than two weeks in advance, it's not a bad idea to use extra yeast.You don't have to go crazy with the math if you get around 50 percent more.If a recipe calls for a packet of yeast, just add another small amount.

Roll and cut the rolls, wrap them tightly in plastic, and freeze them before they rise.You can thaw them in the fridge the night before you bake them.In the morning, take them out, set the pan warm until they double in volume, then bake them.

The problem with this method is that if you don't move them to the fridge, you will have to wait up to six hours for the frozen rolls to thaw.You could just make a fresh batches with that kind of wait time.

If the dough thaws in the fridge overnight, they should only take an hour or two to rise.Depending on how warm or cool your kitchen is, as well as how long the rolls were in the freezer, this will vary.The key is that you are not watching the clock or the rolls.When they have doubled in volume, they are ready to bake.

If you want cinnamon rolls that haven't yet started to brown, you can simply par bake them until they reach their full height, and then freeze them.It should take 10 to 15 minutes.
