Parchment paper can be used at temperatures no higher than 450 degrees.It is true that we occasionally recommend using this liner for bread and pizza baked as high as 500 degrees.
Phone calls to several manufacturers, including Regency and Reynolds, show that using higher-than-recommended temperatures does not release noxious chemicals and the paper will not burn.
There is no question that it can turn brittle.For pizza and other flatbreads that bake in 20 minutes or less, the parchment doesn't turn brittle quickly enough to be an issue.For dishes that are in the oven for more than 30 minutes, such as our Almost No-Knead Bread, the parchment can break down and fall apart, so we use the handles to remove the bread from the hot oven.We recommend placing a strip of folded aluminum foil beneath the paper if you want to use it for long periods of time.The foil made it easy to remove the loaves after they had become brittle, and it had no effect on the color or texture of the bread we baked.
