There are a number of things to do with my Pizzelle Maker ideas.
I like these served with a dusting of icing sugar, but they are also perfect topped with mascarpone and a cascade of fresh berries.
If you don't have a waffle iron, you can use an electric waffle maker.
If using fan-forced, the temperature can be reduced by 20 C.We use Australian cups and tablespoons. All herbs are fresh and cups are lightly packed.Unless specified, all vegetables are medium size and peeled.Unless specified, all eggs are 55-60 g.
1.Place the eggs and sugar in a large bowl.Add the lemon juice and oil.
2.When well incorporated, stir the flour over the egg mixture with a wooden spoon. If the batter is too thin, start with 200 g and add the rest of the flour to make a smooth batter similar to pancake batter.Cook with the baking powder and salt.
3.A waffle iron is used to heat a pizzelle.Unless you are using a non-stick waffle iron, grease it with butter or fat from sliced prosciutto. If you have a big waffle iron, put 2 ounces of batter in the iron and cook until golden.Make sure the iron is turned over halfway through to cook.Dust the remaining batter and serve immediately.
