1. Chinese foods are usually prepared from natural ingredients and vegetables bought fresh with very quick cooking and not cooked to death. 2. Because it is family owned and run, usually have a much lower cost of doing business and therefore has a lower overheads which is reflected in the cost of the meals.
Why is Chinese food cheaper at lunch?
Most Chinese restaurants have a lot of prep work to do so they have the staff working in the afternoon even if they don't open for lunch. So the cost to the restaurant for that lunch special is practically just the cost of the food, no extra rent, no extra labor.

It can often be cheaper to get Chinese take-out than to order a cheeseburger and fries (at a regular restaurant rather than a fast food restaurant.) The quality and authenticity vary but even cheap little places can be quite good.
